Devereau’s Kippers

Devereau’s was started in 1884 and sold to a loyal employee named Peter Canipa in 1972. His family has run it ever since. The factory is open to tours during the Summer Season.

Kippers are smoked herring which have been soaked in brine. In Manx herring is “Ree ny Marrey” or the “King of the Sea”. A traditional Manx dish. Recipes vary on how to best cook them. Personally, I like mine lightly fried in butter, with brown bread and butter as a side dish.
